Recipes for Vegan Oat Burgers, Copy-Cat Arby’s Fries, and Creamy Cashew Gravy

I’ve been working on my education to renew my long-lapsed RN license, and every spare minute I’ve been plugged in listening to webinars. Somehow, in all of those tests and classes, time ran out! Today I am highlighting a delicious recipe for Vegan Oat Burgers.
Oat burgers are my go-to for potluck sharing! In fact, tomorrow, our family is in charge of the fellowship meal after church, and I’m making–you guessed it–Oat Burgers! My recipe is similar to these, and I often add a Creamy Cashew Gravy to go over them. I’ll share that recipe below.

Just add Gravy!
When I make my oat burgers, I often like to add a smooth, creamy cashew gravy! This really adds to the flavor and texture when you are eating them alone, as opposed to in a burger sandwich.
This is the stand-by recipe that I go to for just about anything that needs a creamy sauce. My son made it this morning to go over our potatoes, and it was super yummy! We don’t always add the beans, but it really helps to give it some extra creaminess, protein, and nutrition.
Creamy Cashew Gravy (Vegan)
Place in Vitamix, or other high-powered blender:
- 1/2 c Raw Cashew Pieces, rinsed
- 1 c Garbanzo Beans or Great Northern, Navy, or Cannelini Beans (We used Garbanzo, COOKED (we use canned)
- 2 c Water
- 2 tsp salt (we use Himalayan Pink)
- 2 TBS Nutritional Yeast Flakes
- 1 tsp Garlic Powder
- 2 tsp Onion Powder
- 2 TBS Potato or Corn Starch, or Arrowroot powder (We used potato)
Blend well, then add 2 c more water, or more, depending on desired consistency.
Cook over medium heat, stirring with a whisk or Gravy whisk
May add: Mushrooms, additional beans, sliced onions, tofu
