Healthier No bake cookies

Did you eat No Bake Cookies growing up?

They have always been hard to resist for me! So gooey and sweet and chocolatey!

Healthier no bake cookies

Some people call these boiled cookies, or Novaks. I always wondered if “Novak” was just a local version of NoBake. If you say it fast a few times they start to sound the same. ?

The main things is that they aren’t the healthiest treat out there! A treat is a treat, so they don’t always have to be healthy! But if you want to feel better about what you’re eating and serving, you can alter the recipe a little.

So, while you can find the original recipe for no bake cookies all over the internet, like at Allrecipes.com, this is a healthier option!

Healthier No Bake Cookies

  • Less sugar
  • Carob alternative to chocolate (if you want)
  • Just as yummy!

My mom made these a lot! And once I knew how to read a recipe, so did I!

I have no idea how many these make. The hungrier I am when I make them, the bigger they turn out, and the faster the batter seems to go away!

Actually, the recipe states it will make 36. The other day when I made them, I think I made 12!

You will need:

  • 1/2 cup almond, oat, or soy milk (any plant-based milk works great!)
  • 4 Tbs carob powder or cocoa (you can use either, and it doesn’t drastically alter the taste. Carob powder doesn’t contain the small amount of caffeine that cocoa has. Carob is less bitter, so you can use less sugar!)
  • 8 Tbs (1/2 cup) vegan butter or coconut oil
  • 3/4 to 1 cup sugar (use a less refined version like Morena or sucanat)
  • 1/2 Tsp to 1 Tsp Stevia powder (to taste, but I add the full amount and use less sugar)

Bring all of the above to a boil. Boil for one minute.

Remove from heat and add in:

  • 1/2 cup peanut butter
  • 1 Tbs Vanilla
  • 3 cups quick oats
  • Large pinch of salt
  • 1/4 cup ground flax (totally optional, but I like it!)

Mix well, then drop from spoons into balls onto waxed paper on a cookie sheet to cool.

No baking!

All finished!

Eat and enjoy!
